Protein pasta with bean noodles from the Explorer series

These noodles are simply delicious and there is an additional flavor, edamame and sesame, which is also great.
You can find them in health food stores like Shkadia and Zamora.
Recipe for one serving:
Preparing the noodles:
Boil 2 liters of water.
Add 50 grams of dry noodles and cook until soft.
Drain and set aside.
For the sauce:
100 grams purple silken tofu
50 grams chopped onion/small onion
4 small mushrooms
5 grams coconut oil
5 grams nutritional yeast/teaspoon
Salt and finely ground black pepper and a little cinnamon if you like or nutmeg
Special also with Bharat
preparation:
Chop the onion and mushrooms.
Heat a non-stick pan, and when it is hot, add the coconut oil, onion, and mushrooms and fry for 2 minutes, stirring and preventing them from burning. Aim for browning.
Add about half a cup of boiling water, reduce the heat/stir every few moments.
In a bowl, mix silken tofu with 4 tablespoons of cold water and brewer's yeast until you get a uniform mixture (if you want it creamier, you can grate cheese into it, just grind with a stick blender until you get a smooth batter)
Pour the tofu into the pan over the onions and mushrooms and continue stirring for about another minute until most of the liquid has evaporated.
Pour the fresh ingredients into a deep plate and top with the sauce.
Yasuo! You did it.
Of course, you can use pesto, and then when you grind the silken tofu, add a teaspoon of prepared pesto or 2 basil leaves and a handful of parsley/mint or whatever comes to mind and will work with tomatoes too.
