Lupini protein balls

If you ask me the whole idea with legumes, is that they can definitely be anything, sweet or salty. Another wonderful recipe, enjoy.



Ingredients for protein balls


⁃ 150 g cooked or canned lupini beans

⁃ 35 g (1 scoop) soy protein powder

⁃ 40 g cacao powder

⁃ 30 g defatted coconut flour

⁃ 200 ml high protein soy milk (66 g protein per litre)

⁃ 1/3 scoop sucralose

⁃ 1 knife tip vanillin and salt


Ingredients for chocolate coating

⁃ 20 g coconut oil

⁃ 15 g cacao powder

⁃ 1 knife tip sucralose

⁃ 1 knife tip salt




Directions

1. Put lupini beans into a food processor and process until you get a shredded texture.

2. Add all remaining ingredients and process to get a sticky mass. Depending on the shape of your food processor cup it may happen that after a short time the ingredients get spread on the side and don’t get processed any more. If it happens, pause and bring the mixture back to the centre of the cup where the blade is and process again.

3. Once you get a uniform sticky mass, remove it from the food processor.

4. Divide the mixture into 10 parts and shape 10 protein balls (ca. 45 g each).

5.To coat the protein balls, you can either roll them in cacao powder or coconut flour - as calorie-friendlier option - or coat them with chocolate.


Directions for chocolate coating


1. Place the balls into the freezer for 10-15 min.

2. In the meantime, heat coconut oil in the microwave until it melts (about 1 min). Alternatively, you can heat it on a water bath.

3. Add cacao powder, sucralose and salt to the liquid oil and mix well.

4.Take the balls out of the freezer and coat them with chocolate. Dip each ball one after the other into the liquid chocolate mixture, turn it a few times, until it is fully covered with chocolate. Remove it from the chocolate mixture using a spoon or a fork paying attention that the excess liquid chocolate drips back into the bowl. Put the bar on a sheet of baking paper.

5.After you covered all balls with chocolate place them into the freezer for 5-10 min to let the chocolate solidify.

6. Remove the balls from the freezer and cover them with another layer of chocolate (repeat the procedure described in step 4).

7. Place the bars into the freezer again, let them sit for 10-15 min, take them out and enjoy.


Makes 10 protein balls.
