High-Protein Tofu, Spinach and More

A meal full of rich flavors and very satisfying. Spinach is a great addition and elevates almost any dish.
Ingredients
200 g tofuHalf a pack of spinach or 2 generous handfuls6 mushrooms8 cherry tomatoes1 white onion3 garlic clovesA handful of green beans, about 120 g1 tablespoon olive oil, or skip it and use a little boiling water insteadTurmeric, salt, black pepper, sweet paprika1 cup white rice, about 140 g
Instructions
Rinse the rice under running water until the water runs clear. Drain and place in a non-stick pot that has been lightly heated. Add about 2 cups of boiling water and salt to taste.
In a deep pan, lightly sauté the onion, garlic, mushrooms, and chopped cherry tomatoes using olive oil or boiling water, until slightly softened.
Cut the green beans into 2–3 pieces and roughly chop the spinach. Add everything to the pan. If needed, add a little boiling water to keep the dish fresh and prevent it from drying out or burning. Stir occasionally.
Add the spices and reduce the heat to medium.
Slice the tofu into strips and add to the pan. Increase the heat slightly, add a bit of water if needed, and cook for another minute while stirring.
