Easy indulgent protein cookies

Recipe for 3 Cookies
Ingredients:
50 g protein powder (I used Banoffee flavor)20 g vital wheat gluten30 g spelt flour or whole wheat flour4 g baking powder10 g oats1 g powdered sucralose or about 5 g liquid sweetener90 ml unsweetened soy milk40 g coconut oil, melted (warm slightly if needed)10 g maple syrup30 g 70% cocoa chips
Instructions:
In a bowl, mix all the dry ingredients except the chocolate chips.Add all the liquids and mix well. Knead until a dough forms.Divide into 3 balls and flatten into cookies. Each dough ball weighs about 96 g before baking.
You can decorate with a light sprinkle of sweetener, as shown in the photo.
Preheat the oven to 170°C.Line a baking tray with parchment paper and place the cookies on
it.Bake for about 15 minutes at 170°C.
