Tofu comes in a variety of textures and price ranges, and there are quite a few brands on the market.
My everyday tofu, the one I use for cooked dishes and sandwiches, is firm and fresh. I usually choose the tofu from “Nitzat HaDuvdevan.” It’s actually produced by Meshek Weiler, who manufacture it for Nitzat.
Values per 100 g:

You’re right, protein values vary from one tofu to another. That’s mainly due to differences in water content and how concentrated the soy extraction is.
For example, silken tofu may contain only 5–7 g protein per 100 g, and it’s better suited for yogurts, spreads, or sauces.
The refrigerated red-pack tofu from Ta’amei Asia, for example, provides around 50 calories and 5 g protein per 100 g.
